Ingredients

  • 1 medium-sized beetroot, roasted and peeled
  • 1 can (400g) chickpeas, drained and rinsed
  • 2 cloves of garlic
  • 2 tbsp tahini
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1/2 tsp cumin
  • Salt and pepper to taste

Instructions

  1. In a food processor, add the roasted and peeled beetroot, chickpeas, garlic, tahini, lemon juice, olive oil, cumin, salt, and pepper.

  2. Blend until smooth and creamy, scraping down the sides as needed.

  3. Taste and adjust seasonings if necessary.

  4. Transfer the beetroot hummus to a serving dish and garnish with a drizzle of olive oil and some freshly chopped parsley.

  5. Serve with a variety of dippers like pita bread, carrot sticks, and cucumber slices.
