Serves:

Ingredients

  • 1 lb sprouts, trimmed and halved
  • 1 lb green beans, trimmed
  • 1 lemon, zest and juice
  • 1/4 cup pine nuts
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp soy sauce
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.

  2. Add garlic and sauté for 1 minute until fragrant.

  3. Add sprouts and green beans to the skillet and stir-fry for 5-7 minutes until crisp-tender.

  4. Stir in lemon zest, lemon juice, soy sauce, and season with salt and pepper.

  5. Sprinkle pine nuts over the stir-fried vegetables and cook for an additional 1-2 minutes.

  6. Remove from heat and serve hot.
