Ingredients

  • 4 large carrots, peeled and sliced into thin strips
  • 1/4 cup pine nuts
  • 1/4 cup raisins
  • 2 tablespoons chopped parsley
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat the olive oil over medium heat.

  2. Add the carrot strips and cook for 5-7 minutes, stirring occasionally, until they start to soften.

  3. Add the pine nuts and cook for another 2 minutes, until they are lightly toasted.

  4. Stir in the raisins, chopped parsley, honey, lemon juice, salt, and pepper. Cook for an additional 3-4 minutes, until everything is well combined and heated through.

  5. Remove from heat and serve hot.
