Ingredients

  • 4 cups mixed greens
  • 2 ripe avocados, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup crumbled feta cheese
  • 1/4 cup toasted pine nuts
  • dressing:
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the mixed greens, sliced avocados, cherry tomatoes, red onion, cilantro, feta cheese, and toasted pine nuts.

  2. In a separate small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper to make the dressing.

  3. Drizzle the dressing over the salad and gently toss to coat all the ingredients.

  4. Serve the green salad with avocado immediately and enjoy!
