Ingredients

  • 4 medium zucchini, sliced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 tbsp lemon juice
  • 1 tbsp freshly chopped parsley

Instructions

  1. Place sliced zucchini in a steamer basket and steam for about 10 minutes, or until tender.

  2. Meanwhile, heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant.

  3. Once the zucchini is steamed, transfer it to the skillet with garlic. Season with salt and pepper and toss to coat evenly.

  4. Drizzle lemon juice over the zucchini and sprinkle with freshly chopped parsley.

  5. Serve hot as a side dish.
