Serves:

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups vegetable broth
  • 4 cups fresh spinach
  • 1 potato, peeled and diced
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Optional: grated Parmesan cheese for serving

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and cook until softened, about 5 minutes.

  2. Add the vegetable broth, spinach, potato, dried thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the potatoes are tender.

  3. Use an immersion blender or transfer the soup to a blender, and blend until smooth.

  4. Serve hot, garnished with grated Parmesan cheese if desired.
