Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 4 cups fresh spinach
- 1 potato, peeled and diced
- 1 tsp dried thyme
- Salt and pepper to taste
- Optional: grated Parmesan cheese for serving
Instructions

Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and cook until softened, about 5 minutes.

Add the vegetable broth, spinach, potato, dried thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the potatoes are tender.

Use an immersion blender or transfer the soup to a blender, and blend until smooth.

Serve hot, garnished with grated Parmesan cheese if desired.
