How To Make Spiced Rice Lentils with Cauliflower

Ingredients
- 1 cup basmati rice
- 1 cup brown lentils
- 1 small cauliflower, chopped into florets
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp cinnamon powder
- Salt to taste
- 3 cups vegetable broth
- 2 tbsp olive oil
- Fresh cilantro, for garnish
Instructions

Rinse the rice and lentils separately under cold water. Set aside.

In a large pan, heat the olive oil over medium heat. Add the chopped onion and cook until it becomes translucent.

Add the minced garlic and cauliflower florets to the pan. Cook for 5 minutes or until the cauliflower starts to soften.

Add the cumin powder, coriander powder, turmeric powder, red chili powder, cinnamon powder, and salt. Stir well to coat the cauliflower and onions with the spices.

Add the rinsed rice and lentils to the pan, followed by the vegetable broth. Bring the mixture to a boil.

Reduce the heat to low, cover the pan, and let it simmer for 30 minutes or until the rice and lentils are cooked and the liquid has been absorbed.

Once cooked, fluff the rice and lentils with a fork. Garnish with fresh cilantro.

Serve the spiced rice and lentils with cauliflower hot.
