Ingredients

  • 1 head of cauliflower
  • 2 tablespoons of olive oil
  • 1 teaspoon of garlic powder
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • Optional toppings: chopped parsley, sliced green onions

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Cut the cauliflower into florets and pulse in a food processor until it resembles rice grains.

  3. Place the cauliflower rice on a baking sheet lined with parchment paper.

  4. Drizzle with olive oil and sprinkle with garlic powder, salt, and black pepper. Toss to coat evenly.

  5. Spread the cauliflower rice in a single layer on the baking sheet.

  6. Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the cauliflower rice is golden brown and cooked through.

  7. Remove from the oven and let it cool slightly.

  8. Sprinkle with optional toppings, if desired.

  9. Serve as a side dish or use as a base for stir-fries, bowls, or salads.
