- 4 large potatoes, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
Instructions

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a large bowl, toss the potato pieces with olive oil, salt, black pepper, garlic powder, dried rosemary, and dried thyme until well coated.

Spread the potatoes in an even layer on the prepared baking sheet.

Roast in the preheated oven for about 40 minutes, or until the potatoes are golden brown and crispy on the outside and tender on the inside. Flip the potatoes once halfway through the cooking time for even browning.
