Ingredients

  • 1 cup red lentils, rinsed and drained
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp ginger, grated
  • 2 tsp cumin
  • 2 tsp coriander
  • 1/2 tsp turmeric
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1 can diced tomatoes (14 oz)
  • 3 cups mixed vegetables (such as cauliflower, carrots, bell peppers)
  • 3 cups vegetable broth
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, sauté onion, garlic, and ginger until softened.

  2. Add spices and sauté for another minute.

  3. Add lentils, tomatoes, veggies, and broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until lentils and veggies are cooked.

  4. Adjust seasoning with salt and pepper.

  5. Garnish with fresh cilantro and serve with rice or naan bread.
