Ingredients

  • 4 medium-sized sweet potatoes
  • 2 tablespoons of olive oil
  • 1/2 cup of Greek yogurt
  • 1/2 cup of shredded cheddar cheese
  • 4 strips of bacon, cooked and crumbled
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Wash the sweet potatoes and prick them all over with a fork. Place them on a baking sheet and bake for 45-50 minutes, or until they are fork-tender.

  3. Once the sweet potatoes are cool enough to handle, slice them in half lengthwise and carefully scoop out the flesh into a bowl, leaving a thin layer of sweet potato inside the skins.

  4. Mash the sweet potato flesh with olive oil, Greek yogurt, salt, and pepper until smooth and creamy.

  5. Fill each sweet potato skin with the mashed sweet potato mixture and top with shredded cheddar cheese and crumbled bacon.

  6. Place the loaded sweet potatoes back onto the baking sheet and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

  7. Remove from the oven and sprinkle with sliced green onions. Serve hot.
