How To Make Cajun Chicken and Sausage Gumbo

- 1 lb boneless skinless chicken thighs, diced
- 8 oz andouille sausage, sliced
- 1/2 cup all-purpose flour
- 1/2 cup vegetable oil
- 1 onion, diced
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 2 bay leaves
- 1 tbsp Cajun seasoning
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 tsp cayenne pepper (optional)
- Salt and black pepper to taste
- Cooked rice, for serving
- Chopped green onions, for garnish
Instructions

In a large pot, heat the vegetable oil over medium heat. Add the flour and cook, stirring constantly, until the roux turns a dark brown color, about 15-20 minutes.

Add the diced onion, bell pepper, celery, and garlic to the pot. Cook until the vegetables have softened, about 5 minutes.

Stir in the diced tomatoes, chicken broth, bay leaves, Cajun seasoning, dried thyme, dried oregano, and cayenne pepper (if using). Bring the mixture to a boil.

Reduce the heat to low and add the diced chicken and sliced sausage to the pot. Simmer for 1 hour, stirring occasionally.

Season with salt and black pepper to taste. Remove the bay leaves before serving.

Serve the gumbo over cooked rice and garnish with chopped green onions.
