How To Make Instant Pot Lentil Curry
A hearty and flavorful plant-based dish made with lentils, vegetables, and aromatic spices.
Serves:
Ingredients
- 1 cup of red lentils
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tbsp of ginger, grated
- 2 carrots, peeled and chopped
- 1 red bell pepper, chopped
- 2 cups of vegetable broth
- 1 can of diced tomatoes
- 1 tbsp of curry powder
- 1 tsp of cumin
- Salt and pepper, to taste
- 1/4 cup of cilantro, chopped
- 1 lemon, cut into wedges
Instructions

Rinse the lentils and place them in the Instant Pot.

Add the chopped onions, minced garlic, grated ginger, chopped carrots, chopped red bell pepper, vegetable broth, diced tomatoes, curry powder, cumin, salt, and pepper.

Stir everything together.

Close the Instant Pot lid and make sure the steam release valve is in the sealing position.

Cook on high pressure for 15 minutes.

Allow the pressure to release naturally for 10 minutes, then manually release any remaining pressure.

Stir in the chopped cilantro and serve with lemon wedges.
