Ingredients

  • 4 leeks, cleaned and sliced
  • 6 slices of bacon, chopped
  • 8 oz mushrooms, sliced
  • 2 cloves of garlic, minced
  • 1/2 cup chicken broth
  • 1 tbsp olive oil
  • salt and pepper to taste

Instructions

  1. In a large skillet, cook the bacon over medium heat until crispy. Remove and drain on paper towels. Set aside.

  2. Heat the olive oil in the same skillet and add the leeks. Cook for 3-4 minutes until softened.

  3. Add the mushrooms and garlic to the skillet and cook for an additional 5 minutes.

  4. Pour in the chicken broth and season with salt and pepper. Reduce heat to low and simmer for 10 minutes, until the leeks are tender.

  5. Stir in the crispy bacon and cook for 2 more minutes.

  6. Serve hot and enjoy!
