Ingredients

  • 1 lb chantenay carrots, washed and tops removed
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh thyme leaves

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large bowl, toss the carrots with olive oil, honey, salt, and black pepper until well coated.

  3. Transfer the carrots to a baking sheet, spreading them out in a single layer.

  4. Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and starting to caramelize, stirring once halfway through.

  5. Remove from the oven and sprinkle with fresh thyme leaves. Serve hot.
