Ingredients
- 1 lb chantenay carrots, washed and tops removed
- 2 tbsp olive oil
- 2 tbsp honey
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh thyme leaves
Instructions

Preheat the oven to 425°F (220°C).

In a large bowl, toss the carrots with olive oil, honey, salt, and black pepper until well coated.

Transfer the carrots to a baking sheet, spreading them out in a single layer.

Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and starting to caramelize, stirring once halfway through.

Remove from the oven and sprinkle with fresh thyme leaves. Serve hot.
