Ingredients

  • 2 large red peppers
  • 1 head of broccoli
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1/2 cup crumbled feta cheese

Instructions

  1. Preheat the oven to broil. Slice the red peppers in half and remove the seeds and stems.

  2. Place the red peppers skin side up on a baking sheet and broil for about 5-7 minutes, until the skin is charred and blistered. Remove from the oven and let them cool.

  3. While the peppers are cooling, steam the broccoli until tender, about 5-7 minutes. Drain and set aside.

  4. Once the peppers are cool enough to handle, peel off the charred skin and slice them into thin strips.

  5. Heat the olive oil in a large skillet over medium heat. Add the sliced peppers and cook for 3-4 minutes, until they are softened.

  6. Add the steamed broccoli to the skillet and toss to combine with the peppers. Season with salt and pepper to taste.

  7. Transfer the broccoli and peppers to a serving platter and sprinkle with crumbled feta cheese.

  8. Serve warm and enjoy!
