Serves:

Ingredients

  • 8 stalks of celery, trimmed and sliced into 2-inch pieces
  • 2 tablespoons of olive oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 cup of vegetable broth
  • Salt and pepper to taste
  • 1 tablespoon of fresh parsley, chopped (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until they are fragrant and slightly softened.

  2. Add the celery to the skillet and season with salt and pepper. Cook for about 5 minutes, stirring occasionally, until the celery starts to soften.

  3. Pour in the vegetable broth and bring to a simmer. Reduce the heat to low and cover the skillet. Let the celery braise for about 15-20 minutes, or until it is tender.

  4. Remove the lid and increase the heat to medium-high. Cook for another 5 minutes, or until any excess liquid has evaporated.

  5. Sprinkle with fresh parsley, if desired, and serve hot.
