How To Make Creamy lemon, pancetta & rosemary turkey recipe

We have turkey sandwiched between lovely bread, baked as pie filling, and cooked in a casserole. Whatever way it’s served, turkey meat is a versatile dish you just can’t get enough of.

Ingredients
- 4 turkey breasts, boneless and skinless
- 6 slices of pancetta, diced
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 1 tablespoon of fresh rosemary, chopped
- 1 cup of chicken broth
- 1/2 cup of heavy cream
- Zest of 1 lemon
- Juice of 1/2 lemon
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

Preheat the oven to 375°F (190°C).

Season the turkey breasts with salt and pepper on both sides.

In a large skillet, heat the olive oil over medium heat. Add the pancetta and cook until crispy. Remove the pancetta from the skillet and set aside.

In the same skillet, add the seasoned turkey breasts and sear until browned on both sides, about 3-4 minutes per side. Remove the turkey from the skillet and set aside.

In the same skillet, add the minced garlic and chopped rosemary. Sauté for 1 minute until fragrant.

Add the chicken broth, lemon zest, and lemon juice to the skillet. Bring to a simmer and let it cook for 2-3 minutes.

Stir in the heavy cream and season with salt and pepper. Cook for another 2-3 minutes until the sauce thickens slightly.

Return the turkey breasts and cooked pancetta to the skillet. Spoon the sauce over the turkey.

Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the turkey is cooked through and no longer pink in the center.

Garnish with fresh parsley before serving.
