How To Make Vegetarian Chickpea Tacos

Ingredients
- 1 can of chickpeas, drained and rinsed
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 8 corn tortillas
- Toppings: diced tomatoes, avocado slices, shredded lettuce, salsa, sour cream (optional)
Instructions

Heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, sauté for 2-3 minutes until translucent.

Add the diced bell pepper and cook for another 2 minutes.

Stir in the drained and rinsed chickpeas, chili powder, cumin, paprika, salt, and pepper. Cook for 5-7 minutes, stirring occasionally until the chickpeas are slightly crispy.

Warm the corn tortillas in a separate skillet or directly over a low flame.
