Serves:
Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp paprika
- Salt and pepper, to taste
- 12 small corn tortillas
- Vegetable oil, for frying
- Toppings of your choice: shredded lettuce, diced tomatoes, sour cream, guacamole, etc.
Instructions
-
In a large skillet, cook the ground beef over medium heat until browned. Add in the diced onion and minced garlic and cook until the onion is translucent.
-
Stir in the cumin, chili powder, paprika, salt, and pepper. Cook for an additional 2 minutes to let the flavors meld together.
-
Warm the corn tortillas in a dry skillet or microwave for a few seconds to make them pliable.
-
Scoop a spoonful of the ground beef mixture onto each tortilla and roll tightly. Secure with toothpicks if needed.
-
Fill a large skillet with enough vegetable oil to submerge the rolled tacos. Heat the oil over medium-high heat until it reaches 350°F (175°C).
-
Carefully place the rolled tacos into the hot oil, seam side down. Fry for 2-3 minutes on each side until golden brown and crispy.
-
Remove the rolled tacos from the oil and drain on a paper towel-lined plate.
-
Serve the rolled tacos hot with your choice of toppings such as shredded lettuce, diced tomatoes, sour cream, and guacamole.
