Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp oregano
  • salt and pepper to taste
  • 8 flour tortillas
  • 1 can (10 oz) enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro (optional)
  • 1/4 cup sour cream (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large skillet, cook ground beef over medium heat until browned. Drain any excess grease.

  3. Add diced onion and minced garlic to the skillet and cook until softened.

  4. Stir in cumin, chili powder, paprika, oregano, salt, and pepper. Cook for another minute until fragrant.

  5. Pour half of the enchilada sauce into the skillet and stir until well combined. Remove from heat.

  6. Spoon a generous amount of the beef mixture onto each flour tortilla and roll them up tightly.

  7. Place the rolled tortillas in a greased baking dish, seam side down.

  8. Pour the remaining enchilada sauce over the rolled tortillas, making sure to cover them completely.

  9. Sprinkle shredded cheddar cheese over the top.

  10. Cover the baking dish with foil and bake for 30 minutes.

  11. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

  12. Remove from the oven and let it cool for a few minutes.

  13. Garnish with chopped cilantro and serve with sour cream, if desired.
