Ingredients

  • 1 cup dried lentils
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 1 lb smoked ham, cubed
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 4 cups chicken broth
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Rinse the lentils and set aside.

  2. In a large pot, heat some oil over medium heat. Add the onion, garlic, carrots, and celery. Cook until softened, about 5 minutes.

  3. Add the ham, smoked paprika, and cumin to the pot. Cook for an additional 2 minutes, stirring occasionally.

  4. Add the lentils and chicken broth to the pot. Bring to a boil and then reduce heat to low. Simmer for 1 hour, or until the lentils are tender.

  5. Season with salt and pepper to taste. Serve hot, garnished with fresh parsley.
