Ingredients
- 1 pound tripe, cleaned and cut into small pieces
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 carrot, peeled and diced
- 1 potato, peeled and diced
- 1 plantain, peeled and sliced
- 1 cup pumpkin, peeled and diced
- 1 cup tomato sauce
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 teaspoon paprika
- 1 bay leaf
- Salt and pepper to taste
Instructions

In a large pot, bring water to a boil. Add the tripe and cook for 10 minutes to remove any impurities. Drain and set aside.

In the same pot, heat some oil and sauté the onion, green bell pepper, and garlic until fragrant.

Add the tripe back into the pot along with the carrot, potato, plantain, pumpkin, tomato sauce, cumin, oregano, paprika, bay leaf, salt, and pepper. Stir well to combine.

Cover the pot and simmer for about 2 hours, or until the tripe is tender and the flavors have melded together.
