
How To Make Colorado Buffalo Chili Recipe

Ingredients
- 1 lb Colorado buffalo meat, ground
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 jalapeno pepper, diced (optional)
- 2 cups beef or vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 2 tbsp chili powder
- 1 tbsp cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper (adjust to taste)
- Salt and pepper, to taste
- Optional toppings: shredded cheese, sour cream, green onions
Instructions

In a large pot, heat the olive oil over medium heat. Add the ground buffalo meat and cook until browned, breaking it up with a spoon.

Add the diced onion, garlic, bell pepper, and jalapeno pepper (if using) to the pot. Cook until the vegetables are softened.

Stir in the beef or vegetable broth, diced tomatoes, kidney beans, black beans, chili powder, cumin, paprika, and cayenne pepper. Season with salt and pepper to taste.

Bring the chili to a boil, then reduce the heat and let it simmer for at least 1 hour, stirring occasionally.
