How To Make Herb Omelette with Fried Tomatoes

Ingredients
- 8 eggs
- 1/2 cup chopped fresh herbs (such as parsley, basil, and chives)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tomatoes, sliced
- 2 tbsp olive oil
Instructions

In a large bowl, whisk the eggs with the chopped herbs, salt, and black pepper.

Heat 1 tbsp of olive oil in a non-stick skillet over medium heat.

Pour a quarter of the egg mixture into the skillet and cook for 2-3 minutes, until set.

Flip the omelette and cook for another 2-3 minutes.

Remove the cooked omelette from the skillet and repeat the process with the remaining egg mixture to make three more omelettes.

In the same skillet, heat the remaining olive oil over medium heat.

Add the sliced tomatoes and cook for 2-3 minutes on each side, until slightly softened and golden brown.
