  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 4 cups vegetable broth
  • 2 potatoes, peeled and diced
  • 1 cup corn kernels
  • 1 cup frozen peas
  • 1 cup milk
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, celery, and garlic. Cook until vegetables are softened, about 5 minutes.

  2. Stir in the dried thyme and oregano. Cook for another minute.

  3. Add the vegetable broth and potatoes. Bring to a boil, then reduce heat and simmer, covered, until potatoes are tender, about 15 minutes.

  4. Stir in the corn, peas, milk, and heavy cream. Simmer for another 5 minutes.

  5. Season with salt and pepper to taste.

  6. Serve hot, garnished with fresh parsley.
