Ingredients
- 1 lb tomatillos, husks removed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 jalapeno pepper, seeded and chopped
- 4 cups chicken or vegetable broth
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime
- Optional toppings: sour cream, diced avocado, chopped cilantro
Instructions

In a large pot, bring water to a boil. Add tomatillos and cook for 5 minutes, until softened. Drain and set aside.

In the same pot, heat a tablespoon of olive oil over medium heat. Add onion, garlic, and jalapeno pepper. Cook until onion is translucent and fragrant.

Add the cooked tomatillos to the pot, along with the chicken or vegetable broth, cumin, and salt. Bring to a boil, then reduce heat and let simmer for 15 minutes.

Using an immersion blender or regular blender, carefully puree the soup until smooth.

Stir in the chopped cilantro and lime juice. Taste and adjust seasoning if needed.
