Ingredients
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 jalapeno pepper, seeded and chopped
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 2 cups beef broth
- 2 tbsp chili powder
- 1 tbsp cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper (optional)
- Salt and pepper, to taste
- Shredded cheese, sour cream, chopped green onions, for garnish
Instructions

In a large pot or Dutch oven, brown the ground beef over medium heat. Drain any excess grease.

Add the chopped onion, garlic, bell pepper, and jalapeno pepper to the pot. Cook until the vegetables are tender, about 5 minutes.

Stir in the diced tomatoes, kidney beans, beef broth, chili powder, cumin, paprika, cayenne pepper (if using), salt, and pepper. Bring the mixture to a boil, then reduce heat to low and simmer for 1 hour, stirring occasionally.
