  • 1 cup dried split peas
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, for garnish

Instructions

  1. Rinse the split peas thoroughly and drain them.

  2. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery. Cook until vegetables are tender, about 5 minutes.

  3. Add garlic, bay leaf, thyme, oregano, and salt and pepper. Cook for an additional 2 minutes.

  4. Add split peas and vegetable broth to the pot. Bring to a boil, then reduce heat to low and simmer for 1 hour, or until split peas are tender.

  5. Remove the bay leaf from the pot. Use an immersion blender or a regular blender to puree the soup until smooth.

  6. Season with additional salt and pepper to taste. Serve hot, garnished with fresh parsley.
