Ingredients
- 1 cup dried split peas
- 4 cups vegetable broth
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley, for garnish

Rinse the split peas thoroughly and drain them.

In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery. Cook until vegetables are tender, about 5 minutes.

Add garlic, bay leaf, thyme, oregano, and salt and pepper. Cook for an additional 2 minutes.

Add split peas and vegetable broth to the pot. Bring to a boil, then reduce heat to low and simmer for 1 hour, or until split peas are tender.

Remove the bay leaf from the pot. Use an immersion blender or a regular blender to puree the soup until smooth.
