  • 1 cup red lentils
  • 4 cups vegetable broth
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (optional, for heat)
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish
  • Lemon wedges, for serving

Instructions

  1. Rinse the red lentils under cold water until the water runs clear.

  2. In a large pot, heat some oil over medium heat and sauté the onion and garlic until translucent.

  3. Add the cumin, turmeric, paprika, and cayenne pepper (if using) to the pot and cook for another minute to toast the spices.

  4. Add the rinsed red lentils and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for about 20-25 minutes until the lentils are tender.

  5. Use an immersion blender or transfer the soup to a blender to blend until smooth.

  6. Season with salt and pepper to taste.

  7. Serve the soup hot, garnished with fresh cilantro and a squeeze of lemon juice.
