  • 1 cup red lentils
  • 1 small butternut squash, peeled and cubed
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Rinse the red lentils under cold water until the water runs clear.

  2. In a large pot, heat some olive oil over medium heat. Add the onion and garlic, and cook until softened.

  3. Add the lentils, butternut squash, cumin, coriander, turmeric, and cinnamon to the pot. Stir well to coat the vegetables with the spices.

  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let simmer for about 30 minutes, or until the lentils and butternut squash are tender.

  5. Use an immersion blender or a regular blender to puree the soup until smooth and creamy. Season with salt and pepper to taste.

  6. Serve the soup hot, garnished with fresh cilantro.
