Ingredients
- 1 lb smoked sausage, sliced
- 1 lb medium shrimp, peeled and deveined
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth or stock
- 1/4 cup all-purpose flour
- 1/4 cup vegetable oil
- 2 tsp Cajun seasoning
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
- Cooked rice, for serving
- Chopped green onions, for garnish
Instructions

In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the flour and cook, stirring constantly, to make a roux. Cook until the roux turns a dark brown color, but be careful not to burn it.

Add the onions, bell peppers, and celery to the pot. Cook until the vegetables are softened, about 5 minutes.

Stir in the garlic, Cajun seasoning, dried thyme, dried oregano, salt, and pepper. Cook for an additional 2 minutes.

Add the sausage, diced tomatoes, and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally.

Add the shrimp to the pot and cook for an additional 5 minutes, or until the shrimp are pink and cooked through.
