  • 1 lb smoked sausage, sliced
  • 1 lb medium shrimp, peeled and deveined
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth or stock
  • 1/4 cup all-purpose flour
  • 1/4 cup vegetable oil
  • 2 tsp Cajun seasoning
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Cooked rice, for serving
  • Chopped green onions, for garnish


  1. In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the flour and cook, stirring constantly, to make a roux. Cook until the roux turns a dark brown color, but be careful not to burn it.

  2. Add the onions, bell peppers, and celery to the pot. Cook until the vegetables are softened, about 5 minutes.

  3. Stir in the garlic, Cajun seasoning, dried thyme, dried oregano, salt, and pepper. Cook for an additional 2 minutes.

  4. Add the sausage, diced tomatoes, and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally.

  5. Add the shrimp to the pot and cook for an additional 5 minutes, or until the shrimp are pink and cooked through.

  6. Serve the gumbo over cooked rice, garnished with chopped green onions.
