Ingredients

  • 4 cups chicken or vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) cannellini beans, rinsed and drained
  • 1 cup ditalini pasta
  • 1/2 cup diced onion
  • 1/2 cup diced carrots
  • 1/2 cup diced celery
  • 2 cloves garlic, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • Grated Parmesan cheese, for topping

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, celery, and garlic. Cook until vegetables are tender, about 5 minutes.

  2. Stir in dried basil, dried oregano, salt, and black pepper. Cook for an additional 2 minutes.

  3. Add chicken or vegetable broth, diced tomatoes, and cannellini beans to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.

  4. Meanwhile, cook ditalini pasta according to package instructions. Drain and set aside.

  5. Add cooked pasta to the pot of soup and stir to combine. Cook for an additional 5 minutes.

  6. Serve hot, topped with grated Parmesan cheese.
