How To Make Lentil Soup

Ingredients

  • 1 cup lentils, rinsed and drained
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 stalks celery, chopped
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until onion is translucent.

  2. Add carrots, celery, cumin, and paprika. Stir to combine and continue cooking for 5 minutes.

  3. Add lentils, tomatoes, and vegetable broth. Bring to a boil, then reduce heat and let simmer for 30-40 minutes or until lentils are tender.

  4. Season with salt and pepper to taste. Serve hot.
