How To Make Instant Pot Black Bean Soup Recipe
A warm and hearty soup perfect for cooler weather.

Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 jalapeno, seeded and diced
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes with green chilies
- 2 cups vegetable broth
- Salt and pepper, to taste
- 1 lime, juiced
- Toppings: avocado, cilantro, sour cream
Instructions

Set Instant Pot to sauté mode and add olive oil, onion, garlic, red bell pepper, and jalapeno. Cook for 3-4 minutes until onions are translucent.

Add cumin and chili powder and stir for 1 minute.

Add black beans, diced tomatoes with green chilies, vegetable broth, salt, and pepper. Stir to combine.

Close lid and set Instant Pot to manual mode for 25 minutes.

Once the timer goes off, allow pressure to naturally release for 10 minutes before manually releasing any remaining pressure.

Use an immersion blender or transfer soup to a blender to blend soup until smooth.

Stir in lime juice and adjust seasoning to taste.

Serve hot with desired toppings.
