  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 head cabbage, thinly sliced
  • 3 carrots, peeled and sliced
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Turn on the Instant Pot to sauté mode and heat the olive oil.

  2. Sauté the diced onion and minced garlic until fragrant and translucent.

  3. Add the sliced cabbage and sliced carrots to the pot and cook for a few minutes until slightly softened.

  4. Stir in the diced tomatoes, vegetable broth, turmeric, cumin, and paprika. Season with salt and pepper.

  5. Close the lid of the Instant Pot and set to manual high pressure for 5 minutes.

  6. Once the cooking time is complete, quick release the pressure and carefully remove the lid.

  7. Serve the soup hot, garnished with fresh parsley.
