Ingredients

  • 1 lb ham, diced
  • 1 cup split peas, rinsed
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves of garlic, minced
  • 4 cups chicken broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper, to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add the diced ham and cook until browned.

  2. Add the chopped onion, carrots, celery, and minced garlic to the pot. Cook for 5 minutes, or until vegetables are tender.

  3. Add the split peas, chicken broth, bay leaves, and dried thyme to the pot. Season with salt and pepper.

  4. Bring the soup to a boil, then reduce heat to low. Cover and simmer for about 2 hours, or until the split peas are tender and the soup has thickened.

  5. Remove the bay leaves from the soup. Use an immersion blender or blend with a regular blender until desired consistency is reached.

  6. Serve the soup hot, garnished with some extra diced ham if desired.
