  • 1 cup red lentils
  • 1 onion, diced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 4 cups vegetable broth
  • 2 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, celery, and garlic. Cook until the vegetables are softened, about 5 minutes.

  2. Add the lentils, cumin, coriander, turmeric, vegetable broth, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 25 minutes, or until the lentils are tender.

  3. Use an immersion blender or a regular blender to puree the soup until smooth. If using a regular blender, be sure to allow the soup to cool slightly before blending.

  4. Return the soup to the pot and heat over medium heat until warmed through. Adjust salt and pepper to taste.

  5. Serve the soup hot, garnished with fresh cilantro.
