Ingredients
- 1 cup red lentils
- 1 onion, diced
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 4 cups vegetable broth
- 2 tbsp olive oil
- Salt, to taste
- Black pepper, to taste
- Fresh cilantro, for garnish

In a large pot, heat the olive oil over medium heat. Add the onion, carrots, celery, and garlic. Cook until the vegetables are softened, about 5 minutes.

Add the lentils, cumin, coriander, turmeric, vegetable broth, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 25 minutes, or until the lentils are tender.

Use an immersion blender or a regular blender to puree the soup until smooth. If using a regular blender, be sure to allow the soup to cool slightly before blending.
