- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tbsp curry powder
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/4 tsp turmeric
- 1/4 tsp cayenne pepper (optional, for heat)
- 4 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) chickpeas, rinsed and drained
- 4 cups chopped kale leaves
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions

Heat olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and cook until softened and fragrant, about 5 minutes.

Add the curry powder, cumin, coriander, turmeric, and cayenne pepper (if using) to the pot. Stir well to coat the onions and garlic in the spices.

Pour in the vegetable broth, diced tomatoes, and chickpeas. Bring to a simmer and let cook for 10 minutes, allowing the flavors to meld together.

Add the chopped kale leaves to the pot, and cook for an additional 5 minutes, or until the kale is wilted and tender.

Season with salt and pepper to taste.

Ladle the soup into bowls and garnish with fresh cilantro. Serve with lime wedges on the side for extra zest.
