How To Make Chickpea Soup with Coriander & Lime

Ingredients
- 2 cans of chickpeas, drained and rinsed
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 tbsp of olive oil
- 1 tsp of ground cumin
- 1 tsp of ground coriander
- 4 cups of vegetable broth
- Juice of 1 lime
- Salt and pepper to taste
- Fresh coriander leaves, for garnish
Instructions

Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sauté until they become translucent.

Add the ground cumin and coriander to the pot and stir well to coat the onions and garlic.

Pour in the vegetable broth and add the drained and rinsed chickpeas. Bring the soup to a boil, then reduce the heat and let it simmer for about 20 minutes.

Remove the pot from heat and let it cool slightly. Using an immersion blender or regular blender, blend the soup until smooth and creamy.

Return the soup to the pot and heat it over low heat. Stir in the lime juice and season with salt and pepper to taste.

Serve the soup hot, garnished with fresh coriander leaves.
