Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 4 large carrots, peeled and chopped
- 2 medium potatoes, peeled and diced
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley, for garnish

In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic and cook until onion is translucent.

Add chopped carrots and diced potatoes to the pot. Stir well and cook for 5 minutes.

Pour in vegetable broth and bring to a boil. Reduce heat, cover the pot and simmer for 15-20 minutes or until the carrots and potatoes are tender.

Using an immersion blender or regular blender, blend the soup until smooth and creamy.

Return the blended soup to the pot and stir in the heavy cream. Season with salt and pepper to taste.
