  • 1/2 head of cabbage, thinly sliced
  • 2 potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 can of diced tomatoes
  • 4 cups of vegetable broth
  • 1 tsp of dried thyme
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onion and garlic and sauté until they become fragrant.

  2. Add the potatoes and cabbage to the pot and cook for about 5 minutes, stirring occasionally.

  3. Pour in the vegetable broth and diced tomatoes. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes or until the potatoes are tender.

  4. Stir in the dried thyme, salt, and pepper. Taste and adjust the seasoning as needed.

  5. Serve the soup hot, garnished with fresh parsley.
