  • 2 oranges
  • 1 cup all-purpose flour
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.

  2. Zest and juice the oranges, set aside.

  3. In a mixing bowl, cream the butter and sugar together until light and fluffy.

  4. Beat in the eggs, one at a time, then add the orange zest and vanilla extract.

  5. In a separate bowl, whisk together the flour, baking powder, and salt.

  6. Gradually add the dry ingredients to the wet ingredients, alternating with the freshly squeezed orange juice.

  7. Pour the batter into the prepared loaf pan and smooth the top.

  8. Bake for 45 minutes, or until a toothpick inserted into the center comes out clean.

  9. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  10. Dust with powdered sugar before serving.
