Ingredients

  • 1 pound dried beans (such as navy beans or pinto beans)
  • 4 slices of bacon, chopped
  • 1 medium onion, diced
  • 3 cloves of garlic, minced
  • 4 cups chicken broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Rinse the beans under cold water and remove any debris. Soak the beans overnight in a large bowl with enough water to cover them completely.

  2. In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon grease in the pot.

  3. Add the diced onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1 minute.

  4. Drain the soaked beans and add them to the pot along with the chicken broth, bay leaves, dried thyme, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low and simmer for 2 hours, or until the beans are tender.

  5. Remove the bay leaves and stir in the cooked bacon. Serve hot and enjoy!
