Serves:

Ingredients

  • 2 cups dried beans (such as kidney beans or black beans), soaked overnight
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 jalapeno pepper, seeded and diced
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • 1 bay leaf
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Drain and rinse the soaked beans.

  2. In a slow cooker, add the beans, onion, garlic, jalapeno pepper, cumin powder, paprika, bay leaf, and vegetable broth. Stir to combine.

  3. Cover the slow cooker and cook on low heat for 6 hours or until the beans are tender.

  4. Remove the bay leaf and season the beans with salt and pepper to taste.

  5. Serve the slow cooker homemade beans hot, garnished with fresh cilantro.
