  • 4 red snapper fillets
  • 1/4 cup olive oil
  • 1 onion, thinly sliced
  • 2 cloves of garlic, minced
  • 1 bell pepper, thinly sliced
  • 1 jalapeno pepper, seeded and minced
  • 1 can (14.5 oz) diced tomatoes
  • 1/2 cup green olives, sliced
  • 2 tablespoons capers
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges, for serving

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Season the red snapper fillets with salt and black pepper.

  3. In a large skillet, heat the olive oil over medium heat. Add the onion, garlic, bell pepper, and jalapeno pepper, and cook for 5 minutes or until the vegetables are softened.

  4. Stir in the diced tomatoes, green olives, capers, dried oregano, salt, and black pepper. Simmer for 10 minutes.

  5. Place the red snapper fillets in a baking dish and spoon the tomato and olive sauce over them.

  6. Bake in the preheated oven for 15 minutes or until the fish is cooked through and flakes easily with a fork.

  7. Sprinkle with fresh cilantro and serve with lime wedges.
