  • 8 ounces penne pasta
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1 can (14 ounces) diced tomatoes
  • 1 can (5 ounces) tuna, drained
  • 1/4 cup chopped fresh basil
  • Salt and pepper, to taste
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Cook the penne pasta according to package instructions. Drain and set aside.

  3. In a large skillet, heat olive oil over medium heat. Add the diced onion, minced garlic, and red pepper flakes. Cook until the onion is translucent and garlic is fragrant.

  4. Add the diced tomatoes (with their juice) to the skillet. Bring to a simmer and cook for 10 minutes.

  5. Stir in the drained tuna and chopped basil. Season with salt and pepper to taste.

  6. Add the cooked penne pasta to the skillet and toss until well coated with the sauce.

  7. Transfer the pasta mixture to a baking dish. Sprinkle the shredded mozzarella and grated Parmesan cheese over the top.

  8. Bake in the preheated oven for 15 minutes, or until the cheese is melted and golden brown.

  9. Serve hot and enjoy!
