How To Make Fragrant Coconut, Salmon & Prawn Traybake

Ingredients
- 4 salmon fillets
- 12 prawns, peeled and deveined
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 red onion, sliced
- 1 can (400ml) coconut milk
- 2 tbsp red curry paste
- 1 tbsp fish sauce
- 1 tbsp lime juice
- 2 tbsp chopped cilantro
- Salt and pepper to taste
- Cooked rice, for serving
Instructions

Preheat the oven to 400°F (200°C).

In a large baking dish, arrange the salmon fillets, prawns, bell peppers, zucchini, and red onion.

In a small bowl, mix together the coconut milk, red curry paste, fish sauce, lime juice, cilantro, salt, and pepper.

Pour the coconut milk mixture over the ingredients in the baking dish.

Bake in the preheated oven for 25 minutes, or until the salmon is cooked through and the prawns are pink and cooked.

Serve the traybake over cooked rice and garnish with extra cilantro, if desired.
