How To Make Mini Smoked Haddock Omelettes

- 4 small smoked haddock fillets
- 6 eggs
- 1/4 cup milk
- 1/4 tsp black pepper
- 1/4 tsp dried dill
- 1/4 cup chopped fresh chives
- 1/4 cup shredded cheddar cheese
- Salt, to taste
- Cooking spray
Instructions

Preheat the oven to 375°F (190°C).

In a bowl, whisk together the eggs, milk, black pepper, dried dill, chives, and salt.

Heat a non-stick skillet over medium heat and spray with cooking spray.

Add the smoked haddock fillets to the skillet and cook for 2-3 minutes on each side, until cooked through. Remove from the skillet and flake into small pieces. Set aside.

Pour the egg mixture into the skillet and cook for 2 minutes, or until the edges start to set.

Sprinkle the flaked smoked haddock and shredded cheddar cheese evenly over the omelette.

Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the eggs are fully set and the cheese is melted and bubbly.

Remove from the oven and let cool for a few minutes before serving.

Cut the omelette into quarters and serve hot.
