How To Make Simple Salmon with Spring Pasta

Ingredients
- 4 salmon fillets
- 8 ounces of spring pasta
- 2 tablespoons of olive oil
- 1 lemon, juiced and zested
- 2 cloves of garlic, minced
- 1 cup of cherry tomatoes, halved
- 1 cup of peas
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions

Preheat the oven to 400°F (200°C). Line a baking sheet with foil and place the salmon fillets on the sheet. Drizzle with 1 tablespoon of olive oil and sprinkle with salt and pepper. Bake for 15-20 minutes or until the salmon is cooked through.

Cook the spring pasta according to package instructions. Drain and set aside.

In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.

Add the cherry tomatoes and peas to the skillet. Cook for 3-4 minutes until the tomatoes are slightly softened and the peas are heated through. Season with salt and pepper.

Add the cooked pasta to the skillet and toss to coat with the tomato and pea mixture. Squeeze the lemon juice over the pasta and stir in the lemon zest.

Serve the salmon over the spring pasta and garnish with fresh parsley.
